Cornbread muffins with veggie
Ingredients:
Bunch of parsley, 1 red bell pepper, 100 gr. canned corn, 175 gr. cornflour, 100 gr. wholegrain wheat flour, 2 tablespoons of baking powder, 1/2 tablespoon of salt, 50 gr. softened butter, 1 egg, 250 ml milk
Prep: Preheat oven to 400 degrees F (200 degrees C). Rinse and chop the bouquet of parsley, rinse red pepper and cut into small cubes, strain canned corn. In a large bowl, mix together cornflour and wholegrain wheat flour, baking powder and salt. Stir with a wooden spoon. Grease muffin baking tin with melted butter or line with paper muffin liners.
Mix:
Whisk the egg and softened butter until fluffy, then add milk. Mix in parsley, corn and peppers. Add flour mixture, stir and pour into the muffin molds.
Baking:
Bake at 400 degrees F (200 degrees C) for 15 to 20 minutes.
